Anna Olson’s Perfect Pumpkin Pie

PASTRY- • 6 tbsp cold unsalted butter
- • 6 tbsp cold vegetable shortening
- • 1 1/2 cups all purpose flour
- • 2 tbsp sugar
- • 1/2 tsp fine salt
- • 4 to 5 tbsp ice wate
- • 2 cups canned pumpkin
- • 3/4 cup light brown sugar, packed
- • 3 tbsp fancy molasses
- • 1 tsp cinnamon
- • 1/4 tsp ground nutmeg
- • 1/8 tsp ground cloves
- • 1/2 tsp fine salt
- • 3 large eggs
- • 1 1/3 cups whipping cream
- • 3 tbsp brandy or orange liqueur
- • 1 cup whipping cream
- • 2 tsp sugar
- • 1/4 tsp cinnamon
- • pinch nutmeg
