Layered Mediterranean Dip

This is a great start to a Mediterranean meal or to bring to a cocktail party.

  • ½ cup sour cream

  • 1 (7-ounce) container hummus

  • 1 (6-ounce) jar marinated artichoke hearts

  • ½ cup sliced kalamata olives

  • 1 cup (4-ounces) crumbled feta cheese

  • ¼ cup sliced green onions

  • 1 medium carrot, shredded

  • Combine sour cream and hummus in medium bowl; blend well. Spread mixture on 10-inch round serving dish.

  • Drain artichoke hearts, reserving marinade. Chop artichokes; sprinkle over hummus mixture. Sprinkle olives, feta cheese, onions and carrots over artichoke layer. Drizzle with reserved artichoke marinade. Cover and refrigerate 1 hour or up to 12 hours. Serve with pita chips.
