Pavlova
This is always a hit!
ingredients
- 6 egg whites at room temperature
- 1 1/2 cup berry sugar
- 1 tsp vanilla
- 1 tsp malt vinegar
- 2 tsp potato starch (this recipe is great for Passover)

Preheat oven to 300°.

Draw a 12" circle on parchment or tinfoil and cover a pizza pan with it. Secure tightly. Spray paper with Pam.

Beat egg whites to very stiff. Gradually beat in sugar. Beat in vanilla, vinegar and potato starch. Spread on paper. Make nice edges. Bake 90 minutes. Turn off oven and open door until cool.

When cool,(can be stored for 2-3 days on counter top or in fridge), fill middle with whipped creme or pudding or lemon pie filling. Pile on fruit in arrangements, or chocolate shavings, or whatever appeals to you.

Do this last step the morning of the evening you plan to serve it. Refrigerate until serving.

Cut in wedges and serve.
