Broccoli Rice Casserole

It looks like Gramma started to write 1 jar of jalapenos (“1 jar jalapena”)in the ingredients section of this recipe, but I don’t see it anywhere else. Couldn’t hurt, though, to throw in some jalapenos or green chilis!

ingredients

  • 2 pkg. 10 oz. frozen chopped broccoli
  • 2 c. minute rice
  • 2 cans cream of mushroom soup
  • 1 c. milk
  • 16 oz. (processed) cheese
  • 1/2 c. chopped onion
  • 1 c. celery
  • 1/2 Tbsp. salt & pepper

directions

In 3 quart casserole dish, combine rice, soup, milk, cheese and 1 pinch salt and pepper until cheese melts and blends easily. (I assume this means stick it in a warm oven until hot enough to melt together.) To cheese mixture, add onion, celery and broccoli. Stir and divide between two 10x2x6" lightly greased baking dishes. Bake at 350 degrees for 30 minutes.
