Greek Salad

ingredients
- 1 red onion, sliced & cut into small strips
- 4 green onions, chopped
- 1 red or green bell pepper cut into julienne strips
- 6 large Roma tomatoes, chopped (about 3 cups chopped)
- 1 hot-house cucumber, thinly sliced
- 1/2 to 3/4 c. pitted kalamata olives
- 2 c. crumbled feta cheese
- 3 Tbsp. minced fresh parsley
- 1/3 c. lemon juice
- 1/3 c. olive oil
- 2 to 3 tsp. dried oregano, crushed
- Seasoned salt & pepper, to taste
- 7 to 8 c. bite-sized pieces romaine lettuce

In a large bowl, combine all ingredients except lettuce. Toss until well mixed.

Refrigerate until serving time.

Just before serving, add lettuce and toss until well mixed.
