Greek Salad

Makes 4 to 5 entrée-sized servings or 6 to 8 salad-sized servings.

ingredients

  • 1 red onion, sliced & cut into small strips
  • 4 green onions, chopped
  • 1 red or green bell pepper cut into julienne strips
  • 6 large Roma tomatoes, chopped (about 3 cups chopped)
  • 1 hot-house cucumber, thinly sliced
  • 1/2 to 3/4 c. pitted kalamata olives
  • 2 c. crumbled feta cheese
  • 3 Tbsp. minced fresh parsley
  • 1/3 c. lemon juice
  • 1/3 c. olive oil
  • 2 to 3 tsp. dried oregano, crushed
  • Seasoned salt & pepper, to taste
  • 7 to 8 c. bite-sized pieces romaine lettuce

    In a large bowl, combine all ingredients except lettuce. Toss until well mixed.

    Refrigerate until serving time.

    Just before serving, add lettuce and toss until well mixed.
