Oatmeal Cookies
It’s foolproof!
ingredients
- 1 stick butter
- 1/4 c. organic shortening
- 1 egg plus 1 egg white
- 1 c. firmly packed brown sugar
- 1/4 c. orange juice, lemonade or water
- 1 tsp. vanilla
- 3/4 c. all-purpose flour
- 1/3 c. whole wheat flour
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon (optional)
- 3 slightly heaping cups of old fashioned , uncooked Quaker Oats
- 1/2 c. chopped walnuts
- 1/2 c. raisins (mix dark and golden)

Preheat oven to 350 degrees.

Cream shortening, sugar, eggs, liquid and vanilla.

In a separate bowl, mix the dry ingredients along with cinnamon (if using) and add to the creamed mixture; blend well.

Stir in oats and any other chopped nuts or fruits. Mix well but lightly; stirring just to blend.

Drop by heaping teaspoonfuls onto parchment paper lined cookie sheets.

Bake in pre-heated oven at 350 for 12-15 minutes depending on the size of drop cookie.
Additional Baking Tips

I like to rest my dough in the ref. for several hours or overnight to soften up the oats and blend the fruit flavor thoroughout!

You may use lightly greased cookie sheets but my preference is to use

rimless cookie sheets lined with parchment paper.

An entire batch of dough can be baked at one time in a convection oven!

Feel confident to add chopped dates, nuts,apples or dried figs or apricots! I always add 1 rounded Tbles. ground flax for more fiber! A couple tablespoons of chocolate chips even make them better!! (Don't overdo the chocolate..let it be a sweet surprise)
