Colourful Baked Vegetables
This baby adds colour and zest to any meal.
ingredients
- 2 large potatoes, sliced
- 1 red sweet pepper, sliced
- 4 carrots, sliced
- 1 head cauliflower, cut into chunks
- 4 medium zucchini, sliced
- 1/2 tsp salt
- 3 tbsp olive oil
- Herbs, fresh or dried (rosemary, oregano, thyme)

Preheat oven to 400°. Lightly grease a large baking dish. Combine vegetables in prepared baking dish, and lightly salt. Brush with olive oil until well coated. Sprinkle with herbs as desired.

Bake for 30-45 minutes or until vegetables are tender, turning several times if necessary.

Feel free to mix & match as many different veggies as you want. You may need to drizzle a little bit of additional olive oil to prevent sticking. This came from a Weight Watchers website. It's only worth 2 points per serving, so chow down!
