Red Bliss Potato Salad
ingredients
- 3 lbs. small red skin potatoes
- 1/2 lb. bacon
- 1/4 cup grainy mustard
- 1/3 cup red wine vinegar
- 2 tsp. sugar
- salt and pepper to taste
- 1/2 cup olive oil
- 1 small red onion, finely chopped
- 1 cup chopped parsley
directions
Boil potatoes until firm but cooked through. Cool and slice with skin on. Cut bacon in small pieces and fry until crisp- drain on brown paper bag. Mix dressing by combining mustard, red wine vinegar, sugar, salt and pepper. Toss with potatoes and chopped red onion and let marinate overnight. Add bacon and parsley before serving.
