Daal Soup

ingredients

  • 1 cup red lentils
  • 2 1/2 cup vegetable stock
  • 1 1/4 cup coconut milk
  • 1/2 cup crushed tomatoes
  • 1 chopped onion
  • 1 potatoe (cut into 8 lengthwise pieces)
  • 2 tbsp. butter
  • 2 crushed garlic cloves
  • 2 tsp lemon juice
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • cilantro to garnish

directions

Melt butter in a pot over medium heat. Saute onions and garlic for 2-3 mins. Add spices and cook for 1 minute. Stir in tomatoes, lentils, vegetable and coconut milk. Bring to boil. Reduce heat and simmer for 25-30 mins. until lentils are cooked. Garnish with cilantro.
