Stuffed Zucchini
ingredients
- 4 medium zucchini
- 1/4 cup olive oil
- 1/2 cup chopped onion
- 1 garlic clove minced
- 1/4 lb ground beef or turkey
- 2 tomatoes, chopped and seeded
- 1/2 cup bread crumbs
- 1 tbsp parsley
- Salt and pepper
- 1/4 tsp basil
- Parmesan cheese

1. Preheat oven to 350. Spray pan with Pam. Trim ends off zucchini and place in pot of boiling salt water. Cook for 3 minutes. Remove to platter. When cooled, slice in half, lengthwise. Scoop out center with spoon to make cavity for filling. Chop and reserve center pulp.

2. Saute onion in oil for 5 minutes. Then add garlic and meat. Cook and stir until meat loses color. Remove from skillet. Add reserved pulp and tomatoes. Cook for 1 minute and add to meat mixture. Add remaining ingredients. Mix well.

3. Fill centers of zucchini, but do not pack down. Put in baking dish and bake for 30 minutes. Sprinkle with Parmesan cheese
