Squash Pudding
Put this together with the broccoli casserole, the make-ahead mashed potatoes, and some pineapple bread pudding, and you have all the sides for a holiday meal.
ingredients
- 1 bag frozen squash cubes (or 2 boxes of pre-mashed)
- 1/3 cup sugar
- 2 beaten eggs
- 1 tsp. flour
- 1/2 tsp. baking powder
- 1/8 tsp. salt
- 1/4 cup milk
- 1/2 tsp. vanilla
- 1/8 cup butter (2 Tbs.)
directions
Blend all ingredients together and pour into a 9x9 or similar pan (or 8x14 or 13x9 if you double it). Bake at 350° for 30 minutes, or till firm.
