Tasty Tomato-Basil Squares
try this appetizer for your next get-together. It’s a a simple and flavorful and goes perfectly with red wine!
ingredients
- 1 package (10 oz.) refrigerated pizza crust
- 2 cups (8 oz.) shredded mozzarella cheese, divided
- 1 oz. (1/4) cup freshly grated Parmesan cheese
- 2 Tbsp. fresh basil leaves, snipped
- 2/3 cup mayonnaise
- 1 garlic clove, pressed
- 4 plum tomatoes, thinly sliced

Preheat oven to 375 degrees.

Sprinkle pizza pan or stone with a few pinches of cornmeal. Unroll refrigerated pizza crust and spread to the ends with fingers or a lightly-floured roller. Sprinkle more cornmeal on top of crust.

Sprinkle crust with 1 cup of the mozzarella cheese and set aside.

In large bowl, mix remaining mozzarella cheese, Parmesan cheese, basil and mayonnaise; mix well. Stir in pressed garlic over cheese mixture.

Arrange sliced tomatoes in single layer over mozzarella cheese on crust.

Using tablespoon or mini ice cream style scoop, pace mozzarella cheese mixture over tomatoes; spread to cover evenly.

Bake 15-20 minutes or until top is golden brown and bubbly.

Cut into squares with pizza cutter and serve warm.
