Spinach/Artichoke Dip
ingredients
- 2 Tbsp. flour
- 2 Tbsp. Vegetable or Olive Oil
- 2 cups milk
- Salt, pepper, cumin (about 1/2 tsp.)
- 1 chopped artichoke, fresh or 1 small jar canned
- 2/3 cup chopped spinach (fresh wilted down or frozen, thawed squeezed dry)
- 1 cup shredded cheese (2 or 3 kinds)
- Chopped onion and garlic to taste.
directions
In med. saucepan make a rue of flour and oil. Continue stirring; add milk, salt, pepper, cumin. Let simmer 2 or 3 min. Add artichoke, cheese, spinach, onion, garlic. Continue to stir until hot and smooth. Pour into 1 or 2 small baking dishes. Bake 30-35 min @ 350°. Serve with chips
