Cilantro Three-Bean Salad

Carb Choices: 1Forget old-fashioned three-bean salad! Try this snazzy version that features garbanzo beans, small white beans, and baby limas fired up with jalape’no or serrano peppers and seasoned with cilantro and a low-carb dressing that uses only 2 teaspoons of brown sugar.

  • ¼ teaspoon salt

  • 2 teaspoons packed brown sugar

  • 1 10-ounce package frozen baby lima beans, thawed

  • ½ cup cider vinegar

  • 1 15-ounce can small white beans, rinsed and drained

  • 1 15-ounce can garbanzo beans (chickpeas), rinsed and drained

  • ⅓ cup snipped fresh cilantro

  • ¼ teaspoon ground black pepper

  • Snipped fresh cilantro (optional)

  • 1 to 2 fresh jalapeno or serrano chile peppers, seeded and finely chopped*

  • 3 tablespoons salad oil

  • 3 medium carrots, coarsely chopped
