Carrot Cake

Here is my carrot cake recipe. Whenever possible I try to use organic and local ingredients. It is easy to double, triple or quadruple. Enjoy! Tina

ingredients

Cake
  • Grated carrots (4 large)
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup honey
  • 1 TBSP vanilla
  • 1 tsp baking soda
  • 1 cup grated coconut
  • 2 cups all purpose flour
  • 4 eggs lightly beaten
  • 1 1/2 cups oil (I used olive)
  • 1 TBSP cinnamon
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 cup raisins
  • 1 cup walnuts (lightly toasted-pecans are nice too if you have them)
Frosting
  • 1 stick butter
  • 1 8 oz. pkg. cream cheese
  • 2-3 cups powdered sugar
  • 1-2 tsps. Vanilla
  • 1 TBS honey (optional)
  • 1/2 tsp. cinnamon (optional)
  • Cream butter and cream cheese together until fluffy, add vanilla, honey and cinnamon.

Cake directions:

    Mix sugars with oil and beaten eggs. Add honey, vanilla, and cinnamon.

    Beat well. Add flour, baking powder, baking soda and salt and mix. Then fold in nuts, coconut, raisins and grated carrots. Fill greased and floured cake pan or loaf pans. Bake at 350– until slightly firm but be careful not to over bake.
