Shanna Gibb's Chocolate Mint Bars
A dense, fudgy brownie with a hint of refreshing mint and chocolate icing.
ingredients
- Bottom Layer:
- 1 cup flour
- 1/2 tsp. salt
- 1 cup sugar
- 1/2 cup egg substitute
- 1/4 cup butter, melted
- 2 tbsp. water
- 1 tsp. vanilla
- 2 eggs, beaten
- 1 16oz. can chocolate syrup
- Mint Layer:
- 2 cups powdered sugar
- 1/4 cup butter, melted
- 2 tbsp. milk
- 1/2 tsp. peppermint extract
- 2 drops green food coloring
- Chocolate Glaze:
- 3/4 cup semisweet chocolate chips
- 3 tbsp. butter

Preheat oven to 350°. To prepare bottom layer, combine flour and salt; stir with a whisk. In a separate bowl combine granulated sugar, egg substitute, melted butter, water, vanilla, eggs and chocolate syrup. Add flour mixture to chocolate mixture. Pour batter into a greased 9 x 13 inch pan and bake for 23 minutes. Cool completely on a wire rack.

To prepare mint layer, combine powdered sugar, melted butter, milk and peppermint extract and food coloring. Beat until smooth and spread over cooled cake.

To prepare the glaze, combine chocolate chips and butter in a medium microwave-safe bowl. Microwave in 30 second increments, stirring each time, until smooth. Spread evenly over top. Refrigerate until ready to serve.
