White Beans and Greens Soup
This dish - although not Scandinavian - is one of Isabella’s favorites and a great way to get her to eat greens! The dish is based on a traditional Italian White Bean Soup, served mainly in the winter time.
ingredients
- 3 cans white beans (with the water from the can) and one can of water for each can of beans
- large bunch of Escarole salad or Green Curled Endive
- 2 small cans of tomato sauce
- 1 carrot
- 1 celery stalk
- 1-2 garlic cloves
- 1/4 red onion
- 1/4 cup olive oil
- Salt to taste
- Pepper to taste

Open the cans of beans and tomato sauce. Wash and cut the greens into pieces, only using the leafy green parts. Chop the carrot, celery and onion finely. Mince the garlic in a garlic press.

Heat the olive oil and sauté the garlic, onion, carrot, and celery until soft. Add the beans, tomato sauce,water and greens. Cook on high until boiling and then reduce to medium/low for 45 minutes.

Add salt/pepper to taste. Once cooked, use a masher to mash some of the beans which will thicken the soup.

Serve with Italian Bread and Parmesan.
