Porcupines
ingredients
- 1/2 cup rice
- 1 lb ground beef
- 2 cups tomato juice
- 1 small onion, chopped
- 2 Tbs green pepper, chopped
- 1/2 tsp thyme
- 1 tsp salt
- 1/8 tsp pepper
- 1 clove garlic, minced
directions
Combine all ingredients except tomatow juice. Shape into balls (about 12). Place into Dutch oven and brown on all sides. Pour tomato juice over balls, bring to boil and cover pan. Reduce heat and simmer for 1.5 hours or until rice is tender.
