ingredients

  • Vesuvio Butter
  • 8 Tbs. butter
  • 4 tsp. capers
  • 5 tsp. chopped garlic
  • 4 tsp. lemon juice
  • 1 tsp. rosemary
  • 1 tsp. oregano
  • 1 tsp. parsley
  • 1 tsp. tabasco
  • salt and pepper
  • Chicken
  • 2 Tbs. olive oil
  • 3 boneless chicken breasts
  • 8 oz demi glace
  • 2 oz sherry
  • 4 oz white wine
  • 4 tsp. garlic, chopped
  • lemon juice of 1 lemon
  • 2 egg yolk
  • 5 plum tomatoes
  • 1 cup snow peas, blanched
  • perciatelli pasta

    Butter: combine all ingredients to make vesuvio butter

  • 2

    Cut chicken into pieces and pat dry. Season with pepper and garlic salt. Saute in olive oil until brown. Add garlic, demi glace, both wines and lemon juice. Let thicken by a third (1/3). Whisk in vesuvio butter. Add tomatoes at the end.

    Remove from heat and toss with egg yolks, pasta and snow peas.
