Aunt Liz's Favorite Oriental Chicken Salad
ingredients
- Salad:
- 2 C cooked chicken, (2 boneless breasts) diced
- 1/2 small head cabbage, chopped (I often combine colors – 1/3 red, 2/3 green)
- 1 pkg. chicken flavored Ramen noodles, broken in small pieces (uncooked)
- 2 scallions – chopped very fine
- 2 T sesame seeds, toasted (optional – I don’t use)
- 2 T slivered almonds (optional – I don’t use)
- Lettuce - shredded
- Dressing:
- 1 pkg. seasoning from noodles
- 1 T sugar
- 1/3 C oil (or less) I use olive oil
- 1 tsp. salt
- 1/2 tsp. pepper
- 3 T vinegar (rice – or I like red wine vinegar)
directions
Mix chicken, cabbage, noodles and onions with dressing and stir well. Let sit in fridge overnight – stir occasionally. Mix with torn lettuce (not too much). Add seeds and almonds just before serving, if you use them.

If you take the time to make this, I would double the recipe. Leftovers are good to nibble on.
