Succotash
ingredients
- 2 cups frozen whole kernel corn
- 1 10 oz. package frozen lima beans
- 1/3 c. cut up bacon
- 1/4 c. chopped onion
- 1/2 c. half-and-half
- 1/4 t. salt
- 1/8 t. pepper
directions
Cook bacon and onion in 3 qt. saucepan.Stir in beans and 3/4 c. water. Heat to boiling, Reduce heat and simmer 10 minutes. Stir in corn. Heat to boiling. Reduce heat and simmer 3 minutes. Drain. Stir in half-and-half, salt and pepper. Heat until just heated through.
