Warm Goat Cheese - on lettuce
Great first course - salad
ingredients
- 8 oz goat cheese log
- 2 TB olive oil
- 1 c panko fine bread crumbs
- 1 med red and yellow bell pepper - roasted, seeded and cut into strips
- 1 c dry white wine
- 3 green onions - white only, minced
- 1 lemon - zested and juiced
- 2 tsp rice vinegar
- 1 TB minced fresh thyme
- 1 c olive oil
- kosher salt
- fresh ground black pepper
- 1/2 lb baby salad greens

- cut cheese into 4 pieces
- 2
- dip cheese pieces in olive oil & coat all over with bread crumbs

- arrange on silpat on baking sheet
- 4
- refrigerate one hour
- 5
- bring wine to boil in small saucepan over medium heat & reduce to 1/3 cup & remove from heat and add green onion and lemon zest & let sit until cool

-then whisk in lemon juice and thyme & gradually add the oil in a steady steam whisking continuously (+ S&P to taste)

- pre heat oven to 375 then bake cheese 7-8 minutes

- toss salad greens with 1/2 the vinaigrette & divide salad greens onto 4 plates & arrange peppers around outer edge of the greens

- place baked piece of cheese into middle of greens and drizzle with remaining vinaigrette
