Black Forest Brussels Sprouts
A savory vegetable side dish.
ingredients
- 3 pounds Brussels sprouts, trimmed and halved lengthwise
- 12 oz. thick cut bacon, cut into 1 inch pieces
- 3 tbsp. extra virgin olive oil
- 2 onions, halved and thinly sliced
- Salt and Pepper

1. In a large pot of boiling, salted water, cook the Brussels sprouts for 5 minutes. Drain and rinse in cold water.

2. In a large skillet, cook the bacon over medium heat, stirring until crisp, 8 to 10 minutes, drain, reserving bacon fat. Add 2 tablespoons olive oil to the skillet then stir in the onions and cook over medium heat, stirring until browned, 8-10 minutes. Transfer to a bowl.

3. Add 2 tablespoons of bacon fat and remaining olive oil to skillet and increase heat to high. Add the Brussels sprouts and cook, tossing until beginning to brown, about 5 minutes. Remove from heat and stir in the onions and half the bacon, season with salt and pepper. Top with remaining bacon.
