Orange Honey-Glazed Chicken Stir-Fry
ingredients
- 3 Boneless, Skinless Chicken Breasts
- 4 Tbsp. Honey
- 4 Tbsp. White Vinegar
- 4 Tbsp. Orange Juice (or Orange/Pineapple Juice)
- 2 Tbsp. Soy Sauce
- 2 Tbsp. Cooking Oil
- 2 Cups Loose-Pack Frozen Stir-Fry Vegetables
- 1 Cup Salted Peanuts
- Hot Cooked Rice

Rinse chicken; pat dry. Cut chicken into 1 inch pieces. Set aside.

For sauce: In a small bowl, stir together honey, vinegar, orange juice, soy sauce and cornstarch; set aside.

Pour cooking oil into a wok or large skillet (add more oil as necessary during cooking). Preheat over medium-high heat. Stir-fry frozen vegetables for about 3 minutes or until vegetables are crisp-tender. Remove vegetables for wok. Stir sauce, add to center of wok. Cook and stir until thickened and bubbly.

Return cooked vegetable to wok. Stir in ingredients together to coat. Cook and stir about 1 more minute or until heated through. Before serving add peanuts and mix well. Serve over rice.

This is an easy weeknight meal, as well as a great special occasion dish. They will never know how quick and easy this is.
