Chicken Tortilla Soup

ingredients

  • 4 chicken breast cooked chopped fine
  • 5c. chicken broth
  • 2 cans mild green enchilada sauce
  • 1 can evaporated milk
  • 2c. matchstick carrots
  • 1c.uncooked rice
  • 1 1/2 tsp. cumin
  • 2 c. frozen corn
  • 1 1/2 c. broken tortilla chips
  • finely chopped cilantro or green onions

directions

  • 1

    Combine broth enchilada sauce, milk, carrots, rice and cumin in a saucepan on med.-high heat til simmers Reduce the heat to low and simmer 15 mins or rice is tender.

    Add chicken and corn about 5 mins.

  • 3

    After serving, top each bowl with tortilla chips, cilantro or green onions.
