Chicken Tortilla Soup
ingredients
- 4 chicken breast cooked chopped fine
- 5c. chicken broth
- 2 cans mild green enchilada sauce
- 1 can evaporated milk
- 2c. matchstick carrots
- 1c.uncooked rice
- 1 1/2 tsp. cumin
- 2 c. frozen corn
- 1 1/2 c. broken tortilla chips
- finely chopped cilantro or green onions

Combine broth enchilada sauce, milk, carrots, rice and cumin in a saucepan on med.-high heat til simmers Reduce the heat to low and simmer 15 mins or rice is tender.

Add chicken and corn about 5 mins.

After serving, top each bowl with tortilla chips, cilantro or green onions.
