Zucchini Crab Cakes
2½ cups grated zucchini
1 cup Italian seasoned bread crumbs
1 beaten egg
2 tablespoons Old Bay
2 tablespoons minced onion
1 tablespoon melted butter
Cracker crumbs
In mixing bowl, combine zucchini, eggs and butter.
Add bread crumbs, onion and Old Bay.
Mix well
Shape into patties and roll in cracker crumbs.
Fry in skillet until golden brown.
Place on a paper town when finished.
