Banana Nut Bread
ingredients
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 3/4 cup salted butter, softened
- 1 1/2 cups packed light brown sugar
- 2 large eggs
- 3 cups ripe bananas (about 7 medium), mashed
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts
directions
Preheat oven to 325 degrees. Grease two 9-by-5 inch loaf pans, set aside. In medium bowl, combine flour, soda and salt. Set aside. In large bowl, cream butter and sugar with electric mixer. Add eggs, bananas and vanilla; beat at medium speed until thick. Scrape down sides of bowl. Add flour mixture and walnuts, then blend on low just until combined. Do not overmix. Pour batter into prepared pans. Bake on center rack of oven for 55 to 60 minutes. A toothpick inserted in the center should come out clean and the bread should pull away from the sides of the pans. Remove from oven and cool in pans for 10 minutes. Turn pans on sides and cool to room temperature before removing
