Pecan Cherry Gems
ingredients
- 2 C flour
- 1/2 C sugar
- 1/2 tsp salt
- 1 C butter -- softened
- 4 tbsp rum -- divided
- 2 eggs -- divided yolks and wh
- 1 C ground pecans
- 1 jar maraschino cherries
directions
Preheat oven to 350
Combine flour, sugar and salt in large bowl
Cut in butter until mixture resembles coarse cornmeal in texture
Add egg yolk and 1/2 of the rum
Cover dough and refrigerate until firm (about 1 hour)
As dough is chilling, beat remaining rum with egg whites
Pour chopped pecans in a bowl
Shape chilled dough into 3/4 inch balls and roll in egg white/pecans
Place cookies on an ungreased cookie sheet
Press cherries into the middle of each cookie
Bake for 18-22 mins or until golden
