Super Zuppa
ingredients
- 2 tbsp. olive oil
- 1 med. onion, diced
- 2 med. carrots, diced
- 1 stalk celery, diced
- 2 med. zucchini, diced
- 1 garlic clove, minced
- 3 med. potatoes, unpeeled and diced
- 3 cups thinly sliced cabbage
- 1 (15 1/2 oz) can cannellini beans, drained
- 2 (14 oz.)diced tomatoes, undrained
- 2 (14 oz.) cans low-sodium chicken broth
- 3 cups water
- 1/2 tsp. dried rosemary
- 1/2 tsp salt
- 1/2 tsp. pepper
- grated Parmesan cheese
directions
Heat oil in a large stockpot over medium heat. Add onion, cook, stirring occasionally, 6 minutes or until softened. Add carrots and celery, cook, stirring occasionally, e minutes. Add remaining ingredients(except cheese). Cover and bring to a boil, reduce heat and simmer gently 1 to 2 hours. Serve with Parmesan cheese.
