Greek Orzo and Shrimp Salad
Easy recipe to make ahead. You can buy the pasta in a box or bag in the pasta isle. Buy the shrimp in the frozen department in Costco, pre cooked and defrost in the refrigerator overnight. Buy fresh dill in the produce department. One package is usually enough. I prefer using English cucumbers because of the lack of seeds.
ingredients
- 1 1-lb. box of Orzo
- 1 small bunch green onions chopped
- 1/2 lb. feta cheese crumbled
- 1/2 cup fresh dill chopped
- 5 tbs. fresh lemon juice
- 5 tbs.olive oil
- 1 or 2 lbs. medium shrimp cooked
- 1 English cucumber, quartered lengthwise, cut into 1/4 inch slices
- 1 or 2 baskets cherry tomatoes or romas cut into 8 pieces
directions
Cook orzo according to package directions until tender. Drain and rinse with cold water and drain well. Transfer to a large bowl. Add everything else except the cheese and mix well. This can be covered and refrigerated at this point. Before serving add the cheese and mix well. Season with salt and pepper. Decorate with a little extra fresh dill and tomatoes.
