Cream of Coconut Pie
ingredients
- 1 cup sugar
- 4 tbl flour
- 2 cups milk
- 2 eggs - separated
- 1 teaspoon vanilla
- 1 tbl butter or margarine
- 1 1/2 cup coconut
- 1 9" baked pie shell
directions
Mix flour and sugar in top of double boiler. Add milk. Cook until thick. Add egg yolks and butter and mix thoroughly. Add coconut and remove from heat. Beat until smooth. Pour into 9" baked pie shell. Top with meringue and brown.
