Creamed Spinach
ingredients
- 1/2 C yellow onion
- 2 Tbsp flour
- 1 C milk
- 1/2 C heavy cream
- 1 pckg Boursin cheese (5.2 oz)
- 1 pckg (10 oz) frozen chopped spinach, thawed & squeezed dry
- 2 Tbsp shredded parmesan cheese
- salt & pepper to taste
- 2/3 C bread crumbs
- 1 Tbsp butter, melted
- 1 Tbsp olive oil

Preheat oven to 425°

Coat a 2 cup dish w/non-stick spray

Saute onion in butter until onion is soft; 5 mins. Add flour and stir to coat onion; cook 1 minute.

Whisk in milk and cream, stirring constantly to prevent lumps. Simmer sauce for 1 minute.

Stir in Boursin a little at a time until melted & smooth. Remove pan from heat.

Add spinach, parmesan, salt & pepper. Transfer to baking dish. Top with bread crumbs. Drizzle olive oil over and dot with butter. Bake until bubbly & golden, about 20-25 minutes.
