  • 2 cups heavy cream
  • 4 Tablespoons of soft unsalted butter
  • 1/2 cup parmesan cheese or gorgonzola
  • freah ground black pepper
  • couple shakes of nutmeg


Over medium heat, warm cream til it starts to bubble. Add cheese and whisk in butter, 1 tablespoon at a time. Season with pepper and nutmeg to taste. Key: do not over reduce
