Fruit and Cream Quick Bread
TRULY....The BEST quick bread EVER!
ingredients
- 1/2 cp softened butter
- 3/4 cp sugar
- 2 eggs
- 1/2 cp sour cream
- 1 tsp vanilla extract
- 1 + 3/4 c flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp ground cinnamon
- 1-ish c diced strawberries, peaches, or berries (fresh diced or frozen)
- 1/2 - 3/4 c chopped walnuts

Cream butter and sugar till fluffy. Beat in eggs, one at a time. Mix in sour cream and vanilla.

Combine dry ingredients (except nuts) and stir into the creamed mixtured till just moistened.

Fold in stawberries and nuts.

Pour in standard loaf pan, greased. Bake at 350 for ~60 min, till a wooden toothpick inserted in the center comes out clean.

Cool 10 minuts in pan then transfer to wire rack.

Slice only when you can resist it’s bewitching aroma no more.

The original recipe called for strawberries, but I have made it out of many other fruits over the years. While a smaller dice will give a much better strawberry dispersion and over all berry flavor, larger chunks leave nifty fruit goo filled holes throughout.

This is by far one of the moistest, best tasting quick breads I've ever tried. Great toasted, found on livejournal.com in the cooking community in 2004.
