Taco Soup

This is not only easy, it is low fat and low calorie if you leave off the toppings, so make lots of it and freeze some for another meal.

  • Brown meat and onion in bottom of a stockpot sprayed with PAM.

  • Drain the excess fat.

  • Add taco seasoning through water and simmer over low heat for about 1 hour.

  • To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, scallions and sliced jalapenos
