Taco Soup
This is not only easy, it is low fat and low calorie if you leave off the toppings, so make lots of it and freeze some for another meal.
ingredients
- 1 lb lean ground beef or ground turkey
- 1 onion, diced
- 1 package taco seasoning mix
- 1 package dry ranch salad dressing mix
- 2 cans pinto beans, rinsed and drained
- 1 can no salt added corn, drained
- 2 cans of ROTEL diced tomatoes
- 1 can diced green chilies
- 1 1/2 cups water or thin to your desired consistency
- This can be GARNISHED with:
- corn chips
- light sour cream
- grated cheddar cheese
- sliced scallions
- jalapenos

Brown meat and onion in bottom of a stockpot sprayed with PAM.

Drain the excess fat.

Add taco seasoning through water and simmer over low heat for about 1 hour.

To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, scallions and sliced jalapenos
