Potato Soup
ingredients
- 1 onion, diced
- 1/2 cup butter
- 8 potatoes, peeled and diced
- water
- 3 Tbsp chicken bouillon
- 1/2 cup flour
- 4 cups Half & Half or milk
- 1 Tbsp dried or fresh parsley
- 10 oz frozen peas
- salt
- pepper
- mushrooms (optional)
- shredded carrots (optional)
- shredded zucchini (optional)
- ham (optional)
- green beans (optional)
- bacon (optional)

Sauté onion. Add potatoes and cover with water. Add bouillon and cook till tender. Reduce heat.

Combine flour and HALF of milk or Half & Half. Add to the potatoes and stir for 3-4 minutes or till thickened.

Gradually add remaining milk, veggies and seasoning. Gently heat through.
