Mexican Style Rice & Beans
Simple, mexican inspired bean and rice dish
ingredients
- 1 cup uncooked brown rice
- 1 envelope reduced-sodium taco seasoning
- 1 cup fresh or thawed corn kernels
- 1 398ml can kidney beans
- 1 398ml can small black beans
- 2 cups or more of medium or hot salsa
- 1 cup petite diced cannedtomatoes, undrained

Boil rice in large pot or saucepan as directed on packaging. Drain and set aside when done.

Meanwhile, rinse and drain both types of beans, then dump them into a large saucepan or skillet over medium heat. Add all remaining ingredients, stirring well to make sure taco seasoning is well absorbed. Bring to a simmer and let cook for 5-10 minutes. Remove from heat and stir into rice.

I recommend trying to get as much of these ingredients organic as possible.
