WHITE TEXAS SHEET CAKE
For those who do not like dark chocolate, this is a nice alternative for Texas sheet cake.
ingredients
CAKE- 1/2 cup margarine
- 2 cups sugar
- 2 unbeaten egg whites
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 3/4 cup buttermilk
- 1 teaspoon vanilla
- 1 teaspoon almond extract
- 1 stick margarine
- 1/3 cup buttermilk
- 1 lb. powdered sugar
- 1 teaspoon vanilla
- 1 1/2 cups coconut
- 1/2 cup chopped pecans

CAKE

Cream shortening, sugar, add unbeaten egg whites.

Mix separately: flour, baking soda, and salt.

ADD to mixture alternating with buttermilk, vanilla, almond extract. Bake at 350 degrees F. for 20-25 minutes in a 11x17 inch floured and greased baking pan.
ICING
Melt margarine, add buttermilk, powdered sugar, vanilla, coconut, and pecans. Mix icing and spread over cooled cake.
