Idiot Proof Coffee Can Bread
Any 1 lb coffee can will do, it makes the perfect shape for lunch meat.
ingredients
- 1 cup milk (heated to 110 degrees F)
- 1 package yeast
- 2 tablespoons granulated sugar
- 2 teaspoons salt
- 4 cups flour
- 1/4 cup vegetable oil
- 2 eggs

1)Dissolve yeast in milk.

2)Put 2 cups flour in a bowl add yeast mixture.

3)Mix in oil, eggs, sugar, salt.

4)Add enough flour so that dough is not sticky. Knead until elastic, but light — about 10 minutes.

5)Divide into two and drop one ball of dough into each of 2 greased one-pound coffee cans.

6)Put plastic lids on coffee cans and let rise in a warm place for 1 hour (or until dough forces the lids off the cans).

7)Bake, uncovered, in an oven that has been preheated to 375 degrees F for 20 to 25 minutes....make sure the rack is on the lowest setting, this bread continues to rise while baking. It’s done when it sounds hollow when tapped... Cover tops with foil if getting too brown. Let stand a few minutes, then slide out of the cans.

The smooth sided gourmet coffee cans brown better, but any 1 lb can works fine. Makes killer french toast & great cheesy garlic bread. Freezes well.
