Cheese Soufle
ingredients
- 4T. butter
- 4T. flour
- 1 1/2c milk
- 1t. salt
- Dash cayenne
- 1/4 lb. gruyere cheese
- 1/4 lb. sharp cheddar cheese
- 6 eggs seperated
directions
Melt butter and flour on stove and blend together. Cook for 4 minutes then add milk and whisk together until thickened. Add seasonings and cheese, heat until cheese is melted. Add beaten egg yolks. Once mixture has cooled down add into stiffly beaten egg whites and mix well. Pour into ungreased baking dish or ramekins. If using ramekins. Place baking dish or ramekins into larger dish and fill 1/2 up with hot water for even cooking. Bake at 300 for 1 1/4 hours.
