Italian Pound Cake

  • Pre-heat oven to 325 degrees. Grease and flour a 10-cup tube or Bundt pan. With an electric mixer, beat the butter in a mixing bowl until light and fluffy. Add the sugar gradually, beating constantly. Beat in the oil and milk. Add the eggs 1 at a time, beating well after each addition.

  • In a separate bowl, sift together the flour and baking powder. Gradually beat flour mixture into the sugar mixture. Stir in the almond extract. Pour into pan. Bake for 90 minutes or until toothpick inserted close to the center comes out clean.
