Jan Schopler's Scottish Tea Tarts
She was a lovely woman and I’ll always think of Jan when we have these.
ingredients
- Dough:
- 1/2 Cup Butter
- 2 Ounces Cream Cheese
- 1 Cup Flour
- Filling:
- 2 Eggs
- 1 Cup Brown Sugar
- 3/4 Cup Pecans
- 2 Tablespoons melted Butter
- Salt
- 1/2 teaspoon Vanilla

Preheat oven to 325 degrees.

In a medium bowl, cream together the dough ingredients. Chill for 30 minutes. In a medium bowl, add filling ingredients and blend together on low for about 30 seconds until well-blended.

Remove dough from refrigerator and drop 1 Tablespoon into ungreased tart tins. Press dough into bottom and sides to make tiny tarts.

Fill each tart 3/4 full with filling.

Bake at 325 degrees for 35 minutes, cool for 15 minutes. Gently remove from tart tins. Delicious with coffee.
