Banana Nut Loaf
ingredients
- Dry:
- 3 Cups Flour
- 3 1/2 Teaspoons baking powder
- 1 teaspoon salt
- Wet:
- 1 Cup Sugar
- 2 Tablespoons Shortening, softened
- 2 Eggs
- 3/4 Cup Milk
- 1 Cup, Peeled Mashed Bananas (bananas must be very overripe, nearly black, for this bread)
- 3/4 Cup Nuts, optional (shelled and skinned walnuts work the best)

Preheat oven to 350 degrees. Sift together dry ingredients into medium bowl. Set aside. Combine wet ingredients in large bowl Adding nuts last. Stir together until well combined. Mix dry ingredients into wet. Pour into a well-greased 9” x 5” loaf pan. Let stand 5-10 minutes before baking.

Bake at 350 degrees for 45-60 minutes or until toothpick inserted into center of loaves comes out clean. Cool in pan for 20 minutes. Remove from pan and cool on cooling rack until ready to eat. Bread freezes beautifully, recipe doubles easily.
