This light and fresh salad is a great accompaniment to just about any meal.

ingredients

  • 2 tbsp. sherry vinegar
  • 2 tbsp. balsamic vinegar
  • 1 clove garlic, minced
  • 2 tsp. dried oregano
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1/3 cup extra-virgin olive oil
  • 1 (4.5 oz.) bag mixed baby greens
  • 1 red bell pepper, seeded and diced
  • 1 small red onion, sliced into thin rings
  • 2 oz. feta cheese crumbled

directions

    Whisk together the vinegars, garlic, oregano, salt and pepper.

    Toss the baby greens, bell pepper, and onion with enough vinaigrette to coat. Top with feta cheese

Try adding croutons or toasted nuts for some extra flavor
