Mixed Bean - Cherry Tomato Salad with Basil Vinaigrette
ingredients
- 1 lbs Fresh yellow beans
- 1 lbs Fresh green beans
- 1/4 C Balsamic vinegar
- 2 tbsp Extra VIrgin olive oil
- 1/2 tsp Kosher salt
- 1/2 tsp Black Pepper
- 3 C Cherry Tomato
- 1 C basil leaves -- Finely chopped
- 1/2 C Red onion -- Diced
directions
Cook beans (green/yellow) for 5 minutes. Drain and plunge beans into cold water to keep them from cooking. Drain cold water and set beans aside
Combine vinegar, oil, salt and pepper.
Add beans, tomatoes, basil leaves and onion. Toss gently
Cover and chill
