ingredients

  • 2 tbsp. olive oil
  • 1 lb. fresh mushrooms -- sliced
  • 2 onions -- chopped
  • 1 20 oz loaf Italian or french bread -- cut into 1" cubes
  • 1 16 oz pkg herb seasoned stuffing mix
  • 4 eggs -- beaten
  • 2 14 oz can chicken broth
  • 2 tsp rubbed sage, chopped
  • 2 tsp dried thyme
  • 2 tbsp. garlic powder
  • salt and pepper

directions

Saute mushrooms, celery and onions in oil till softened. Dampen fresh bread cubes (not the stuffing mix) and squeeze out any excess water. In large bowl, combine mushroom mixture, bread cubes, stuffing mix, eggs and 1 can chicken broth. Season with sage, thyme, garlic powder and salt and pepper. Mix well. Mixture will have a rather paste like consistency. Mix in additional chicken broth as necessary. Cover with foil and bake for 30 minutes at 350 degrees. Uncover, and brown top.
