Ricotta Filling for Cannoli Shells
ingredients
- 4 C ricotta cheese
- 1 1/2 C unsifted powdered sugar
- 4 tsp vanilla
- 1/2 C finely chopped citron or orange peel
- 1/4 C small semi-sweet chocolate chips

Whirl ricotta in blender until very smooth. Fold in sugar and vanilla. Mix in orange peel and chocolate chips. Chill several hours or overnight.

Fill shells right before serving.
