Roasted Red Potatoes
Perfect roasted potatoes that go with anything.
ingredients
- 2 lbs. Red Potatoes - cut into 1 inch cubes
- 1 lb. brown onion chopped
- 1 Tbs. fresh rosemary chopped
- 2 Tbs. fresh flat-leaf parsley chopped
- Salt and Pepper
- Olive Oil

Preheat oven to 375°
- 2
Place Potatoes and Onion in a 9 x 13 baking dish. Toss with rosemary, parsley, salt & pepper and olive oil.

Cover with foil and roast in oven for 45 minutes. Uncover and roast for another 15 minutes until golden and crispy.

The girls enjoyed this little lovelies with Italian Chicken after wine tasting...we ate the leftovers cold with breakfast the next morning!
