Rod's Mexican Chicken Pizza
Since I have heard so much regarding the famous Taco Off, I decided it may be time for another Mexican themed recipe – 20 years is a long time to be stuck on one taco recipe. This is great for a group and even better as leftovers. It has more than 5 ingredients, but they are “good for you” ingredients. Plus you can double the amounts and make 2. Amounts and cooking are estimates and can be adjusted according to taste and style.

- 2 Large Free Range Boneless and Skinless Chicken Breasts
- 1 Large Pizza Crust (Boboli is good, but you can choose your favorite one)
- 2 Cans of Spicy Refried Black Beans – Fat Free
- 4 Garlic Cloves
- 1 Large Red Onion
- 1 Jar of Jalapeños
- 1 Jar of Salsa Verde - spicy
- 1 to 2 Large bags of Shredded Mozzarella
- Pepper Seasoning (your favorite type)
- Olive Oil
- Pizza Pan

Preparation:

Preheat oven to 400 degrees

Put Spicy Black bean in pot and place on stove on low/medium heat to warm thoroughly. Stir occasionally.

Cut up the chicken into small squares and add to frying pan with a small amount of olive oil. Cook until almost done.

In the meantime cut up onion and garlic into small pieces. When chicken is almost done add onion and garlic to frying pan and stir until fully cooked.

Once fully cooked add Jalapeños and Salsa Verde and set to simmer. You may add as much as required based on your level of taste/spiciness.

Coat Pizza Crust with a small amount of olive oil and warm in oven on the rack for a few minutes. Do not leave in too long or it will become too dry.

Remove pizza crust and place on pizza pan.

Add a layer of spicy refried black beans to the pizza crust. Amount and thickness to be determined by you.

Next add the chicken/veggie mix that has been simmering on the stove. Spread evenly around the crust. Lightly press into the beans.

Finally add a liberal amount of shredded cheese. Be sure to cover completely, but allow for some melting along the edges. It’ll get running after cooking.

Place in oven still at 400 degrees and watch until the cheese is almost fully melted.

For the final cooking turn on the broiler and slightly brown the cheese. Watch carefully as it can brown quickly.

Remove from the oven and let cool for a few minutes.

Cut into pizza size slices and serve.

Save some for the next day. Wrap and place in fridge. Heat again in the oven if possible or microwave if last resort.
