Sauteed Kale
One of the healthiest side dishes you can eat, packed with vitamins and antioxidants!
ingredients
- 1 bunch of Kale, ends and middle ribs removed.
- 2 C low-sodium chicken stock
- 1 T olive oil
- 2 shallots, minced
- 2 cloves garlic, minced
- salt & pepper
directions
In a saute pan, heat olive oil over medium heat. Saute shallots and garlic for a few minutes. Turn heat up and add chicken stock and kale. Cook for 12 minutes or until stock is mostly cooked off. Season with salt & pepper. Serve immediately!
